Evenly mixed is a critical stage in the production of mayonnaise. A temperature-controlled mixing technique has been developed to produce a stable, highly uniform emulsion. The Automatic Mayonnaise Mixer features a high shear unit that produces very small oil droplet sizes, avoids trapping microbubbles in the product, and prevents flocculation and sedimentation. The mixer uses vacuum technology to introduce ingredients below the surface of the liquid. This results in instant emulsification, avoids agglomeration and creates “fish eyes” and reduces air mixing and foaming. The hygienic system design ensures complete emissions from the batch-to-batch mixer, reducing waste, minimizing product loss and speeding up cleaning. The hygienic mixer features an efficient in-place cleaning (CIP) configuration for the highest quality mixing and shorter processing times.
